"Don't fry it in olive oil, it burns." You have heard this phrase in every Albanian kitchen. It rests on a misconception that has been circulating for decades and that studies in recent years have disproved.

How much heat can olive oil handle?

The smoke point of extra virgin olive oil is around 190-210°C, depending on acidity and purity. Home roasting takes place between 160°C and 180°C. So olive oil stays within the limit, contrary to what is believed.

The most important factor is not smoke point, but oxidation resistance. Here, olive oil leaves seed oils behind. Polyphenols and vitamin E protect the molecule from breaking down, so olive oil produces fewer harmful compounds than sunflower or soybean oil at the same temperature.

When to use it raw

Heat reduces some of the flavor and antioxidants. For this reason, share the use:

  • Raw: salad, beans, pie after baking, on bread, on cooked fish
  • In gentle cooking: vegetable stews, sauces, casseroles
  • In frying: potatoes, meat, pancakes, without letting it smoke

Three mistakes that damage the oil in the pan

  1. Let the empty pan heat up with the oil inside. Add the oil when the pan is slightly heated, not fried.
  2. Reuse the oil several times. Each heat cycle increases oxidation. Use a maximum of two times.
  3. Wait until smoke comes out. Smoke means you've crossed the line and the oil has lost its value.

Why quality changes the outcome

An oil with low acidity and no adulteration lasts longer in the heat. Industrial blended oils begin to smoke earlier because they contain more free fatty acids. That's why the same recipe turns out differently with Shkrela cold-pressed olive oil.
