You have bought a great bottle. Now the question is how to store olive oil so it stays that way. Good storage is simple, and it makes the difference between fresh, peppery oil and something flat and stale.

The three enemies: light, heat and air

Olive oil oxidises when exposed to light, warmth and oxygen. Oxidised oil loses aroma and antioxidants and can taste rancid. Protecting it from all three keeps quality high.

Why dark glass matters

Dark glass filters light that would otherwise speed up oxidation. That is why premium oil is sold in dark bottles or tins rather than clear plastic. It is also why we bottle Shkrela oil in dark glass.

Ideal storage conditions

  • Temperature: a cool, steady spot, roughly 14–20°C.
  • Location: a cupboard or pantry, not next to the stove or in direct sun.
  • Cap: close it tightly after each use.
  • Refrigerator: not needed. Cold can cloud the oil, which is harmless and clears at room temperature.

How long does olive oil last?

Unopened oil in a good bottle usually keeps well for 18–24 months from bottling. Once opened, aim to finish it within a few months for the best flavour. Buy sizes that suit how fast you use it: a small bottle for the table, a larger one for cooking.

  • Keeping the bottle beside the cooker.
  • Leaving it open or half-empty for months.
  • Decanting into clear containers on a sunny shelf.
  • Buying oil from shelves in bright sunlight.
