Your blood test showed high cholesterol and your doctor told you to cut down on fat. Then you heard that olive oil is good for the heart. Both are true, because not every fat behaves the same way in the blood.
How oleic acid works
About 73% of olive oil is oleic acid, an unsaturated fat with one double bond. When it replaces saturated fats from butter, fatty meat or processed products, LDL goes down and HDL stays the same or rises slightly.
The effect does not come from adding. It comes from replacing. That is the part most people miss.
The role of polyphenols
The European Food Safety Authority has approved a health claim for olive oil polyphenols: they contribute to the protection of blood lipids from oxidative stress. What matters is oxidation, not just the numbers. Oxidised LDL is what sticks to the artery walls and forms plaque.
To benefit, you need an oil rich in polyphenols – extra virgin, cold-pressed and fresh. Refined oils lose these compounds during processing.
How long does it take to see a difference?
Clinical studies measure changes in the lipid profile after 6–12 weeks of regular consumption of 20–40 grams a day, combined with a balanced diet. A week of olive oil on top of an unchanged diet will not move anything.

- Replace butter and margarine with olive oil
- Add vegetables, legumes and fish twice a week
- Cut down on sugar and industrial baked goods
- Walk for 30 minutes a day
