“Don’t fry with olive oil, it burns.” You have heard it in every Albanian kitchen. It is based on a misconception that has been around for decades and that recent studies have overturned.

How much heat can olive oil take?

The smoke point of extra virgin olive oil is around 190–210°C, depending on its acidity and purity. Home frying takes place between 160°C and 180°C. So olive oil stays within the limit, contrary to popular belief.

The most important factor is not the smoke point but resistance to oxidation. Here olive oil leaves seed oils behind. Polyphenols and vitamin E protect the molecule from breaking down, so olive oil produces fewer harmful compounds than sunflower or soybean oil at the same temperature.

When to use it raw

Heat reduces some of the aroma and antioxidants. So split its use:

  • Gentle cooking: sautéed vegetables, sauces, pot stews
  • Frying: potatoes, meat, fritters – without letting it smoke

Three mistakes that damage oil in the pan

  1. Heating an empty pan with the oil already in it for too long. Add the oil when the pan is warm, not scorching.
  2. Reusing the oil several times. Every heating cycle increases oxidation. Use it twice at most.
  3. Waiting until it smokes. Smoke means you have crossed the limit and the oil has lost its value.

Why quality changes the result

An oil with low acidity and no blending holds up to heat for longer. Blended industrial oils start smoking sooner because they contain more free fatty acids. That is why the same recipe turns out differently with cold-pressed Shkrela olive oil.
